"Chinese Take-Out" Lemon Chicken

Makes: 4 servings, 1 cup each
1 Tbsp. oil
1 lb. boneless skinless chicken breasts, cut into strips
1 pkg. (6 oz.) snow peas (about 2 cups), trimmed
1 small red pepper, cut into strips
1 pkg. (4-serving size) Lemon Flavor Gelatin
1 Tbsp. cornstarch
1/2 cup chicken broth
2 Tbsp. Zesty Italian Dressing
2 cloves garlic, minced
Directions
HEAT oil in large skillet on medium-high heat. Add chicken; cook 4 min. or until cooked through, stirring occasionally. Add snow peas and peppers; cook and stir 2 min.
MIX dry gelatin mix and cornstarch in small bowl. Add broth, dressing and garlic; stir until gelatin is dissolved. Add to skillet. Reduce heat to medium; cook 3 min. or until sauce is thickened, stirring frequently.
SERVE over hot cooked rice, if desired.

Substitute 2 pkg. (6 oz. each) Grilled Chicken Breast Strips for the cooked fresh chicken strips. Heat oil in skillet as directed. Add chicken breast strips, snow peas and peppers; cook 3 to 5 min. or until chicken is heated through and vegetables are crisp-tender, stirring frequently. Continue as directed.
Instead of fresh veggies, try some frozen ones! According to one reviewer, the meal will still taste delicious and still have the nutritious veggies.
Want to jazz it up a little?
Add 1-1/2 tsp. minced fresh gingerroot or 3/4 tsp. ground ginger along with the broth, dressing and garlic.

jello chicken and veggies is not working for me
1It got rave reviews - apparently the combination is delicious! It's not really lemon jello, that just adds the flavoring. A little weird, I know, but one of these days, I really want to try it.
2I made this about a month ago and it's great. I substituted frozen peas for snow peas and it was fine. The lemon jello is what brings it together.

5it doesn't come out all thick and gelatinous?
6This sounds a little wrong, but I think it's more a lemon sauce or a lemon gravy. It definitely won't end up as blobby little chunks of jello hidden throughout the dish. That would be disgusting!
7Now I am wondering if you could use orange jello and make orange chicken. I'm going to have to try this, I really like that it's not breaded and fried.

11It doesn't come out thick and gelatinous - combined with the cornstarch it covers the chicken nicely. My sister made it for her kids (5 and 7) and the loved it.
12The recipe sounds great...never thought of using gelatin mix but it makes sense. It won't go all jelly like unless its refridgerated but then again cornstarch does that as well. I definately giving this one a try!
13It is a strange concept to use jello with chicken and veggies, but I've made this several times and it is really good. I substitute various vegetables, as I do not like snow peas. I use peppers, onions, carrots and zucchini. Kraft suggests orange jello also as a substitute so I'll have to try that soon! Off to make this for dinner! Enjoy!
